The key to successful grilling is a tasty cut of meat from your favourite butcher and…the marinade!
You don’t have to be a great cook to add this extra bit of flavour to your BBQ meat. With these basic rules and marinades you’ll always be on the safe side and sure to impress your friends and family.
You should never run short of olive oil, lemon juice, garlic, salt and pepper as these ingredients form the base of pretty much any marinade.
For the best results let your meat soak overnight in the fridge to absorb all the beautiful flavours but a couple of hours marinating will already make a remarkable difference.

Red Wine Marinade
Whisk together 1 teaspoon of minced garlic, 100 ml red wine, 4 tablespoons olive oil and 1 tablespoon tomato paste in a bowl until smooth, add black pepper. Place steaks in a ceramic dish and pour over marinade. Cover and place in fridge for at least 2 hours. This marinade is ideal for beef and lamb.
Spicy Ginger Marinade
Peel and finely chop ginger (size of a walnut). Clean one chilli peppers, wash, dry and cut into rings. Mix ginger, chilli with 2 tablespoons lime or lemon juice, 6 tablespoons of peanut oil and 4 grains crushed allspice. This marinade is perfect for chicken, pork or fish.
Asian Style Marinade
This marinade will make any pork chops extra juicy and tasty. Just mix 3 tablespoons soy sauce, 3 tablespoons chicken stock, 1 tablespoon sesame oil, half a teaspoon freshly grated ginger, 1 garlic clove, 1 teaspoon lemon juice and 1 teaspoon honey.
